Avocado and shrimps salad

a fresh, light and delicious dish

Avocado and shrimps salad is one of those simple and genuine dishes, born one day by chance. It was almost dinner time, I had little desire to cook and even less to go out for shopping. I just used the ingredients that I found in the refrigerator creatively

avocado and shrimp salad Ingredients:

  • 300 gr of shrimp
  • 100 of Greek yogurt
  • 1 avocado
  • 3 carrots
  • 1 heart of celery (I only use the inner inner part)
  • 1 pomegranate
  • a few mint leaves
  • 1 lemon
  • salt
  • extra virgin olive oil

1. avocado

The first thing to do is to peel and pit the avocado by pouring a few drops of lemon juice to block oxidation. Mash the fruit with a fork and add the salt and the remaining part of the lemon juice. Finally a few tablespoons of Greek yogurt, some mint leaves. Blend everything with a mixer for a few seconds

2. shrimps

pour a couple of tablespoons of extra virgin olive oil into a frying pan, add the shrimp and cook over medium heat for a couple of minutes. It is important not to overcook the shrimp to prevent them from becoming chewy

3. fresh ingredients

as fresh vegetables I have chosen celery and carrots, but you can also use any other vegetables. Clean and julienne the carrots. Dice the heart of the celery

4. almost ready

We just have to compose the dish. In a serving dish, put the julienne carrots, diced celery, in a corner put some quenelles made with the avocado cream. Finally tip in the shrimps and the cooking sauce.

5. last step

Seasoning with extra virgin olive oil, salt and pepper. Add in some mint leaves and pomegranate grains, or some slices of green apple..

usually I like to accompany this salad with bread bruschetta seasoned with oil, salt and oregano
